Those carrot tops you’ve lopped off are not garbage. Your snapped-off green-bean stems are not scraps. They are what Thomas McQuillan, sustainability director for Baldor, a specialty foods and produce distributor, calls sparcs – “scraps” spelled backward and pronounced like “sparks.”
