Potatoes have unique foodservice challenge

Most commodities strive to be where potatoes are. They are the number one side dish ordered at restaurants and eating establishments all over the country. With $7.7 billion in manufacturer sales destined for foodservice and 13.1 billion pounds delivered, they are literally the envy of every item in the produce department. “We are very highly utilized already as one of the most widely menued items in the United States,” said John Toaspern, chief marketing officer for Potatoes USA. “Potatoes are on more than 90 percent of the menus, but there is room for growth.”
