USDA hog carcasses proposal draws opposition

Monday was the final day for the public to comment on a USDA Food Safety and Inspection Service proposal to remove a requirement that hog carcasses be cleaned before any incision is made for inspection or evisceration. The agency said this provision impedes the adoption of more effective procedures for preventing contamination, and is no longer necessary because carcass cleaning is required by other regulations. In comments , the Safe Food Coalition argues the proposal puts consumers at risk because FSIS doesn't yet have meaningful performance-based standards for controlling harmful pathogens like salmonella in pork.
