When demand for tobacco began to decline two decades ago, North Carolina farmers started looking for a new a cash leader.
Now the state is far and away the nation’s leading sweet potato producer, growing more than half the U.S. crop. There are more than 400 sweet potato growers in North Carolina harvesting almost 100,000 acres annually.
