Why farm organically, following strict, national rules that limit what chemicals and practices you can use? In 2020, organic food sales rose 12.8% to $56.5 billion, besting the prior-year gain of 4.6%. More than 5% of total food sales in the U.S. are now organic. It costs more to grow organically, but the extra premium paid by the consumer can more than make up for it. In 2016, North Carolina joined the top 10 states with the highest organic sales.
