This year, the international panel on climate change released a landmark report and stated definitively that climate change has already begun impacting the planet. That includes the global food system- which contributes a quarter to a third of global greenhouse gas emissions. Vegetables are particularly at risk because they tend to be fragile plants. Out in the field, unexpected rain or drought can destroy a crop, putting populations at risk of malnutrition.
