FSIS guidelines aim to reduce E. coli shedding

USDA's Food Safety and Inspection Service has issued a guidance document aimed at preventing E. coli O157:H7 contamination through reduced fecal shedding on the farm and during live animal holding before slaughter.

The document supports principles including clean water, clean feed, clean environment, reduced animal density and biosecurity. It also covers ongoing research of pre-harvest interventions and management practices.

FSIS is seeking comment on the guidelines. Comments can be submitted online through the Federal eRulemaking Portal by referencing docket number FSIS-2009-0034.
