The USDA's Food Safety & Inspection Service (FSIS) has issued a notice that gives its inspection program personnel specific instructions on how to select the beef trimmings to be tested under the MT50 project code (which essentially covers testing of trim for E. coli). The trimmings selection must be random, and yet the inspectors must test all the different types of trim over the specified period of time.

In addition, the notice specifies that product intended to be treated with ammonia is subject to FSIS sampling at the slaughter establishment before it is sent to be ammoniated.
