Comments on a proposed rule to modernize the way young chickens and turkeys are inspected are now due on May 29, FSIS announced in the Federal Register.

The original deadline to submit comments was April 26. The agency said it agreed to extend the comment period at the request of constituents.

FSIS said it is also soliciting additional comments on how it should implement the final rule and requesting available data on any worker safety issues associated with increased line speeds.

FSIS published the proposed rule on Jan. 27. Key elements of the proposed new inspection system include:
Requiring that personnel sort carcasses and remove unacceptable carcasses and parts before the birds are presented to the FSIS carcass inspector.Reducing the number of on-line carcass inspectors to one.Permitting faster line speeds than are permitted under the existing inspection systems.Requiring that establishments maintain records to document that the products resulting from their slaughter operations meet the definition of ready-to-cook poultry. In addition to the new inspection system, FSIS also proposed changes that would require slaughtering establishments to develop written procedures to prevent contamination of carcasses and parts by enteric pathogens and fecal material.
