FSIS directive targets poultry slaughter operations

USDA’s Food Safety Inspection Service (FSIS) has published Directive 6410.3, which provides off-line Inspection Program Personnel (IPP) with instructions on how to verify that poultry slaughter establishments are implementing sanitary dressing and process control procedures to prevent adulterated products.

Under the directive — “Verifying Sanitary Dressing and Process Control Procedures by Off-Line Inspection Program Personnel (IPP) in Poultry Slaughter Operations” — IPP assigned to establishments operating under the Public Health Information System (PHIS) must verify that the establishment is operating in a manner that prevents poultry from becoming contaminated throughout the process.

In addition, it directs IPP to verify that the establishment’s sanitary dressing process results in poultry carcasses that enter the chiller without visible contamination and that in establishments using air chilling, IPP must verify that no visible contamination is present on poultry carcasses at the time they enter the cooler or, if packaged before cooling, before packaging.
