FSIS clarifies which chickens to get salmonella tests

USDA’s Food Safety and Inspection Service has published a notice instructing inspectors on which young chicken products are eligible for carcass sampling in its salmonella and campylobacter verification testing program.

All young chickens – including Cornish game hens, broilers, fryers and roasting chickens – are eligible, FSIS said. However, capon, hen, fowl, baking chicken, stewing chicken, cock or rooster are not subject to salmonella and campylobacter verification testing, the agency said.

Some chicken slaughter plants may have been excluded from sampling because inspection program personnel or facility employees misunderstood which chicken product classes were subject to sampling, FSIS said in the notice.
