For decades, Americans mainly consumed sweet potatoes in casseroles flowing with butter and marshmallows on Thanksgiving and Christmas. But in recent years this mainstay of North Carolina agriculture has charted new territories – on restaurant menus, in healthy drinks and as frozen french fries on grocery store aisles.
