Comment period on tenderized beef extended

Responding to industry requests, the USDA’s Food Safety and Inspection Service has extended the comment period on its proposed rule regarding needle- or blade-tenderized beef products by 60 days. Comments now are due October 8.

FSIS initially published its proposed rule on June 10. Among the proposal’s specifics, FSIS said it wanted to require the use of the phrase “mechanically tenderized” on label of raw or partially cooked needle- or blade-tenderized beef, including product injected with marinade or solution, unless the products were destined to be cooked before being packaged for sale.

Other details included the size and color of the phrase on the label, and reminders to consumers and foodservice employees of the minimum temperature and time for cooking such products.

Two industry associations subsequently asked FSIS for a 120-day extension to the period for public comment, because the agency asked for feedback not only on the proposed rule and guidance but also on several other related issues, the agency said in a news release. The agency ultimately decided that a 60-day extension of the comment period was sufficient.
