Scot Sanborn is a patient man. He has to be.Stacked in the main room of his Winston-Salem distillery, Sutler’s Spirit Co., are eight oak barrels filled with rum, with 12 more waiting for a batch. It will take 18 months — at least — for those barrels and that rum to bond and age into something Sanborn can proudly put on the shelves of North Carolina’s ABC stores.
