Rien Fertel, author of “The One True Barbecue: Fire, Smoke, and the Pitmasters who Cook the Whole Hog,” wrote a short piece for Time magazine, “The 8 Best BBQ Spots in the Carolinas.” Six of the eight restaurants are in North Carolina, and the only Triangle destination is Picnic in Durham.
