James Doss has 86ed the sweet potato  special. A humble tuber, perfectly grilled over a wood flame, simply adorned with a few cheffy flourishes -- the dish was a celebration of North Carolina's state vegetable in its platonic ideal form. But with Hurricane Matthew robbing Doss of his favored source, the chef and owner of Rx Restaurant would rather wait for next year than compromise.
