USDA’s Food Safety and Inspection Service (FSIS) issued a notice today instructing inspectors how to sample imported pork products for salmonella species.

FSIS samples imported raw beef and imported raw poultry products. This notice expands the sampling of imported products to include imported raw pork products.

Key points in the notice include that sampled lots are not subject to test and hold, and if positive are not refused entry. But when a sample tests positive for salmonella, the importer of record may choose to drawback an entire or partial lot from the United States.
