FSIS gets inspectors up to speed on poultry carcass inspection duties

USDA’s Food Safety and Inspection Service has issued a notice clarifying inspector responsibilities related to slowing line speeds during poultry carcass inspection.


The resissued notice comes after the Office of Field Operations requested more information about heavy young chickens that may require a line speed reduction to give poultry carcass inspectors enough time to properly complete inspection procedures.


The notice instructs inspectors on their responsibilities and authorities relating to assessing and reducing slaughter or evisceration line speed in poultry and livestock establishments.
